Manual harvest for 15 kg boxes. Crushing and total destemming with protection against early oxidation. Clarification in 18 hours. Controlled fermentation between 20ºC – 22ºC. Stainless steel stage.
Citrus yellow color and shiny appearance. Delicate aroma, with notes of the unmistakable character of the Rabigato variety. In the mouth, it surprises with the remarkable acidity, conferred by the Viosinho variety, by the striking structure, creamy texture and by the delicate retronasal aroma, which give it a long and attractive finish.
Strong dishes of fish in the oven or cod and octopus.
