Vinification:
Hand-picked at their optimum point, the grapes are destemmed, crushed and vinified according to a process based on careful maceration with extraction of colour, tannins and aromas from the films, complemented by permanent pumping over during fermentation. This occurs in mills, with a controlled temperature between 28-30ºC, until reaching the desired Baumé degree. At this stage, the wine spirit is added (benefit), giving rise to a fortified wine. High quality wine, obtained by blending wines from harvests of several years, in order to acquire a complement of organoleptic characteristics typical of this ancient tawny style. Cálem 20 Years Tawny is a wine that reflects the art of the blend, and results from the careful combination of wines aged in oak casks, with an average age of 20 years.

Advice for Store and Serve:
Store horizontally at ± 15º C, constant temperature. Best served at 15 – 18ºC.

Food pairing:
Slightly fresh, it is the ideal choice to accompany starters made up of strong cheeses and pâtés. The velvety texture and unique aromatic expression stand out notably in main dishes that include nuts. Irresistible with a terrine of foie gras with eggplant and walnuts.
