Vinification:
Handpicked at their optimum point, the grapes are destemmed, crushed and vinified according to a process based on careful maceration with extraction of colour, tannins and aromas from the skins, complemented by permanent pumping over during fermentation. This occurs in mills, with a controlled temperature between 28-30ºC, until reaching the desired Baumé degree. At this stage, the wine spirit is added (benefit), giving rise to a fortified wine. High quality wine, obtained by blending wines from vintages of several years, in order to acquire a complement of organoleptic characteristics typical of this ancient tawny. Cálem 40 Years Tawny is a wine that reflects the art of blending, and results from the careful combination of wines aged in oak casks, with an average age of 40 years.

Storage and serving advice:
Store horizontally at ± 15°C, constant temperature. Best served at 15 – 18ºC.

Pairing with food:
Slightly fresh, it is the ideal choice to accompany starters made up of strong cheeses and pâtés. The velvety texture and unique aromatic expression stand out remarkably in main dishes that include nuts. Irresistible with foie gras terrine with eggplant and walnuts. Intense cheeses and milk chocolate mousse, or combine with a cigar.
