Grape varieties: Baga,Touriga Nacional.

Vinification: Fermentation started at a controlled temperature of 14 to 16ºC and when it reached about half, a small amount of bentonite was poured in order to stabilize the proteins and at the same time reduce the content of lees in suspension. At this point the temperature was lowered to decrease yeast activity and allow the lees to sediment in the vat. When the sugar content reached 20-25 g/l, the wine was bottled with clean valves (to avoid contact with the lees) and no secondary yeasts or sugars added. 100% bottle fermentation on full lees. No sulfites added. Unfiltered. Our first experiment with red grapes and our first released Pet-Nat.

Recommendation: should be served between 6º and 8ºC.
