Vinification:
Manual harvest in the coldest hours of the day. Gentle pneumatic pressing at low temperatures to conserve aromatic potential. Cold decanting for 48 hours. Fermentation with selected yeasts at 14 / 16ºC for 6 weeks in small vats of 1500 to 3000L. Aging for 6 months in contact with the fine lees with periodic battonage at controlled temperature. Aging 6 months in bottle.
