The grapes are hand-picked, carefully selected and destemmed in granite presses where they are trodden by foot for 4 hours. The must is fermented by indigenous yeasts at a temperature between 20 and 25 °C and the wine spirit is added at the appropriate time to stop the fermentation. At the end of fermentation, the liquid is drained, the masses are pressed and the wine transferred to old port wine barrels where it ages for several years until bottling.
