Vinification:
The grapes are hand-picked in small boxes and transported to the cellar located on the farm itself, with very little transport time. Total destemming. Very short skin maceration. Long fermentation at low temperature: 20 ° C. Total malolactic fermentation. Aging in stainless steel for 9 months followed by a bottle aging for 6 months.
