VINIFICATION: The grapes were harvested by hand, at their ideal point of maturation, with the intention that they present a vigorous maturation, leading to higher aromatic and polyphenolic concentrations. Vinification was carried out in a mill, with foot treading and fermentation in stainless steel vats, thus allowing the quality constituents present in the skins of the well-ripe grapes to pass smoothly into the wine, with light pumping over and prolonged maceration.
AGING: After malolactic fermentation, the wine aged for 14 months in new and 1st year French Oak barrels.
