Vinification:
After the manual harvest, the grapes were received in the cellar, in the special line, a total removal is carried out, where a careful selection of manual bunches is made and later “bag by bago” by an optical selection machine. Careful vinification in a winery, with pre-fermentation maceration and temperature control.
