Vinification:
The white Redoma comes from small vineyards over 40 years old, planted with many different varieties, the most important being rabigato, codega do larinho, arinto, gouveio, boal and viosinho. These special vineyards tend to offer delicate and mineral wines of great complexity. These vineyards are planted at high altitudes, between 400 and 700 meters, on mica slate soils, on the right bank of the Douro River. The end result is an impressive wine, with great intensity, freshness and minerality. The vines burst was unusually early in 2011, the whole cycle was brought forward and the harvest started earlier than ever, however the higher planted vines were slower than the others, and when the harvest was done all the wines had a good amount of malic acid, very important for the freshness in the mouth of white wines where malolactic fermentation is not carried out. After transport and sorting in a refrigerated truck, the grapes are pressed very quickly overnight without any maceration at low temperature and decanted for 24 hours at low temperature. Fermentation took place in 228 liter French oak barrels and aged for 10 months on fine lees, without malolactic fermentation or batonnage. The wine was bottled at the end of June.
