Vinification:
The grapes are hand-picked into small-capacity boxes and transported to the cellar in a short time. After pressing and prior fermentation at controlled temperature, the must was decanted for 48 hours. Fermentation takes place in stainless steel, thanks to a higher temperature than usual for white wines. Bottling is carried out after a period of batting and aging on fine lees.
